A readily self-seeding biennial found along edges of fields, meadows, riverbanks, and dry places with frequent disturbance.
All parts of the plant are edible, raw or cooked. Harvest roots from first year plants in fall through early spring. Young leaves on rosettes in winter are available and palatable when all else is dead. Eat the stalk in late spring/early summer, but peel off the outer layer. Stick to small leaves on newest growth in summer months. Flower buds in summer. Seeds have the highest amount of gamma linolenic acid (GLA) than anything else. Pfaf.org
